About us.

Commensal Fermentation was formed by Michael Mathis and two of his long time friends from different parts of his life. The archaic meaning of Commensal is the people you bring to your table, your commensal types. Finding this fitting for his friends as to whom he still shares his table with, Morgan and Piotr also embody this mentality regarding their passion for people, time and place.

Commensal Fermentation is a veteran and minority owned brewery, in Portland, Oregon.

With over 10 years of professional brewing experience, a BS in microbiology, AS in laboratory science, and formal brewing education from the American Brewers Guild, Michael was ready to take the leap to fulfill his dream in opening a brewery with two friends with different backgrounds.

Our goal is to focus on beer as a brewery and not set the limit on what we choose to make, nor what we can make. We have no boundaries when it comes to producing and serving beer and hope to be able to provide options for everyone as much as we can, because at the end of the day everyone has a different opinion of what they like. We are here to discuss the nitty gritty of our beers or specificity of beer styles while also not talking about beer at all while you enjoy a pint. We also fully understand if you don't like what you taste, it's normal.

In the end we want you to be able to count on us for beer that you can share at ours, yours, or someone else's table and be happy as we are to do so.
